Abstract in brief

  • The study measured both lipophilic (fat-soluble) and hydrophilic (water-soluble) antioxidant capacities in over 100 common U.S. foods using the ORACFL assay, showing a wide range of antioxidant levels that vary by food type, season, region, and processing methods.
  • Results indicated that hydrophilic antioxidants generally have higher ORACFL values than lipophilic ones, and processing methods like cooking and peeling can significantly affect antioxidant levels in foods.
  • Overall, the estimated daily intake of total antioxidants from these foods was about 55.58 micromoles of Trolox equivalents for hydrophilic and 16.6 micromoles for lipophilic antioxidants, highlighting the contribution of diet to antioxidant intake.

Antioxidants are key to reducing the impact of oxidative stress. Antioxidants create a barrier or a shield around the cell to help protect it from being damaged. Blueberries are very high in antioxidants. 2/2 https://t.co/6vDQwzpYY6
